Yuzu Cake
Yuzu is a citrus fruit native to Eastern China. It has an appearance of a grapefruit, a very aromatic rind, and an intense, acidic flavour reminiscent of tangerine.
Ingredients

120g butter

2 whole eggs

120g flour

60 ml yuzu juice
Preparation Method
- Preheat the oven to 180°C.
- Mix the softened butter with the sugar, and add the whole eggs and the yuzu juice.
- Finalize by incorporating the flour.
- Grease a cake tin with butter, then line it with icing sugar or use a silicone baking tin.
- Pour the mixture into the mold, taking care not to exceed 2cm in height, and bake for 15-20 minutes at 180°C.
- Unmold after baking and consume at room temperature.
