Walnut Cake and Marmalade
These walnut cakes with marmalade, a sweet made from fresh quinces, without colourings or preservatives. A real treat!
Ingredients

150 g butter

1 tablespoon of butter (for greasing)

80 g jam

1 unit of orange

1 tablespoon cinnamon powder

4 pieces of eggs

150 g walnut kernels
-
80 g flour
-
1 tbsp. flour (for sprinkling)

1 tablespoon quince jam
-
1 tablespoon of grated coconut
Preparation Method
- In a bowl, mix the sugar and butter. Add the diced marmalade, half the orange zest and the cinnamon.
- Separate the egg yolks from the egg whites. Set the egg whites aside and add the egg yolks to the previous mixture. Mix well.
- Add the walnut kernels and flour and beat well.
- Beat the egg whites until stiff and fold into the mixture.
- Pour the mixture into greased and floured mini cake tins.
- Bake in the oven, preheated to 180°C, for about 20 minutes.
- Serve the cakes brushed with jam and decorated with more orange zest and grated coconut.
