Vegan Pad Thai
An easy, vegan alternative to the classic pad thai.
Ingredients

300g Tofu

50g Mushrooms

½ red onion

Chives
-
Coriander

1 lime
Preparation Method
- Cook the rice noodles (included in the noodle kit) in hot water for about 5 to 8 minutes (until they are slightly soft).
- Drain the noodles and rinse them under cold water to prevent further cooking, then set aside.
- Heat vegetable oil in a non-stick frying pan and fry 150g of diced tofu for 5-8 minutes until golden brown.
- Then fry the sliced mushrooms and red onion. Set aside.
- Sauté the chopped red onion. Then add 150g of diced tofu. Add the fried tofu and mushrooms.
- Add the cooked noodles. Add the Pad Thai sauce. Continue stir-frying for 5 minutes until all the ingredients are well mixed.
- Add the bean sprouts and chives. Keep stirring until cooked through.
- Serve your Pad Thai straight from the pan and garnish with crushed cashew nuts, a handful of fresh coriander and lime wedges.
