Vegan Fajitas
Vegan fajitas are a great way to use up any leftover veggies you may have at home. Feel free to get creative and adapt the recipe to what you already have!
Ingredients
Fajitas:

1 lime (juice)

1 tablespoon dried oregano

3 tablespoons of olive oil

400g broccoli
-
1 chive (coarsely chopped)

1 yellow pepper (cut into strips)
Guacamole

1 ripe avocado
-
½ lemon
-
1 tablespoon extra virgin olive oil
Serve:

1 handful of coriander (coarsely chopped)
Preparation Method
- In a small bowl mix together the chipotle paste, lime juice, soy sauce, dried oregano, 1 tbsp olive oil and set aside.
- Heat 2 tablespoons olive oil in a frying pan. When hot enough, add the broccoli, chives, green beans and yellow pepper. Fry over a high heat and when they are ready, remove them from the pan and set aside in a bowl.
- Introduce the cherry tomatoes into the same pan and let them get a little blistered, then add all the vegetables back to the pan, introduce the chipotle mixture, stir and season with a pinch of salt and freshly ground black pepper.
- Finally, add the beer and let everything simmer for a minute or two. Garnish with chopped fresh coriander scattered on top and when it’s ready, set aside.
- In a small pan, heat the refried beans for a few minutes.
- Meanwhile, prepare quick guacamole by mashing the avocado pulp with a fork in a medium-sized bowl. Add a little lime juice, the extra virgin olive oil and season with a pinch of salt and freshly ground black pepper. Mix together and set aside.
- Serve the vegan fajitas with the hot Tacos, guacamole and refried beans on the side. Prepare your tacos by adding a spoonful of hot beans to your tortilla wraps, then top with the vegan fajitas and some guacamole. Enjoy!
