  • 1 ripe avocado
  • ½ lemon
  • 1 tablespoon extra virgin olive oil

Preparation Method

  1. In a small bowl mix together the chipotle paste, lime juice, soy sauce, dried oregano, 1 tbsp olive oil and set aside.
  2. Heat 2 tablespoons olive oil in a frying pan. When hot enough, add the broccoli, chives, green beans and yellow pepper. Fry over a high heat and when they are ready, remove them from the pan and set aside in a bowl.
  3. Introduce the cherry tomatoes into the same pan and let them get a little blistered, then add all the vegetables back to the pan, introduce the chipotle mixture, stir and season with a pinch of salt and freshly ground black pepper.
  4. Finally, add the beer and let everything simmer for a minute or two. Garnish with chopped fresh coriander scattered on top and when it’s ready, set aside.
  5. In a small pan, heat the refried beans for a few minutes.
  6. Meanwhile, prepare quick guacamole by mashing the avocado pulp with a fork in a medium-sized bowl. Add a little lime juice, the extra virgin olive oil and season with a pinch of salt and freshly ground black pepper. Mix together and set aside.
  7. Serve the vegan fajitas with the hot Tacos, guacamole and refried beans on the side. Prepare your tacos by adding a spoonful of hot beans to your tortilla wraps, then top with the vegan fajitas and some guacamole. Enjoy!
