Tuna and Dry Tomato Bruschettas

Preparation Method

  1. Toast the bread slices in the toaster or in the oven.
  2. If you choose the latter, drizzle a little olive oil over them first.
  3. Crumble the tuna into a bowl, reserving the olive oil from the tin.
  4. Add the finely sliced celery, the chopped dried tomatoes, the capers, the lemon juice and half the reserved olive oil.
  5. Stir in some rockets and spread the mixture over the slices of toasted bread.
