Tom Kha Kai Soup
Tom Kha Kai is one of the easiest, quickest, yet tastiest soups you will ever taste! It is light yet creamy, sweet yet citrusy. It can be served as a main dish or appetizer, with or without rice, it reheats beautifully.
Ingredients

250g Chicken Breast

2 Shallots

120gr Mushrooms

1 tablespoon Lime Juice

Coriander
Preparation Method
- Boil 500ml of water in a large pan. Add the chicken stock when the water is boiling. Add shallots.
- Add 250g chicken breast, sliced. Bring to a boil.
- Add mushrooms (cut into quarters) and cherry tomatoes. Add Tom Kha paste sachet.
- Add 180ml coconut milk and 1 tbsp fish sauce. Simmer over low heat until cooked.
- Add 1 tbsp lime juice, and garnish with fresh coriander.
