Tofu Thai Satay with Peanut Sauce
A vegetarian version of the popular Thai satay recipe, full of flavors and accompanied by a peanut sauce.

200g Tofu

50g Mushrooms

2 Cloves Garlic

3 Tbsp Coconut Sugar

Preparation Method
- Crush 2 cloves of garlic using a mortar and pestle. Set aside.
- In a bowl, mix together yellow curry paste, crushed garlic, coconut milk, coconut sugar, and light soy sauce. Set aside.
- Peel the mushrooms and cut them into large cubes. Cut the tofu into large cubes.
- Place the diced tofu and mushrooms in the marinade. Insert onto skewers, trying to line them up evenly and push them together closely.
- Heat oil in a large non-stick frying pan over medium-high heat until hot.
- Add skewers to the pan and cook for a few minutes, turning occasionally, or until cooked through and browned. Brush with the marinade left over the marinade.
- Place skewers on a plate and top with fresh coriander. Serve hot with Coconut and Peanut Satay Sauce.
