Tiramisu with Cantucci

Preparation Method

  1. Start by beating the egg whites until stiff and set aside;
  2. Beat the egg yolks with the sugar until pale cream and set aside;
  3. Involve the mascarpone in the egg yolk mixture, beating well so that it becomes homogeneous;
  4. Then add the egg whites to this mixture and refrigerate;
  5. To assemble the Tiramissu, start by passing the cantuccini through the coffee and rum mixture and make a layer in the bottom of a tray, which we will cover with a little of the previous cream; repeat the operations until both preparations are used up;
  6. Sprinkle abundantly with cocoa powder and chill until serving.
