Thai Fried Rice
Thailand’s signature rice dish, ready in minutes!
Ingredients

6 prawns (peeled and shredded)

50g pineapple

1 Carrot (diced)

½ Shallot (chopped)

1 clove garlic (minced)

1 Chive (chopped)

Cashew nuts q.b

Sultanas to taste

1 bunch Coriander leaves (chopped)
Preparation Method
- Heat the oil in a wok over medium heat, then when the oil is hot enough add the minced garlic. Stir the garlic well until it turns golden brown.
- Next add prawns, then stir occasionally until they are almost cooked. Add the diced carrot and chopped shallot. Continue stirring until carrot is cooked through.
- Add cooked rice, a pinch of salt, sugar, a pinch of white pepper, fish sauce, oyster sauce, and pineapple chunks. Finally, add the chives and stir until all ingredients are well mixed (about 2-3 minutes).
- Remove your fried rice from the pan and top with fried cashew nuts and dried sultanas. Garnish with a handful of coriander and serve with lime.
