Swordfish Fillets with Banana
The swordfish is an elongated fish that is available in few places in the world, however it is typical of Madeira. It is located at a depth of about 1000 meters and despite its unappealing appearance, if you are a fish lover you will be delighted by its flavor. The succulent swordfish fillets are seasoned with garlic, lemon juice, salt and pepper. The peeled bananas and fish fillets are then dipped in egg and flour and then fried in olive oil and sprinkled with sprigs of fresh parsley. They are served with boiled potatoes, also known locally as “semilha”, lettuce and tomato salad.
Ingredients

800 g swordfish fillets

3 cloves of garlic

300 g passion fruit pulp

4 bananas

Salt q.b.

pepper q.b.
Preparation Method
- Arrange the fillets and season with the minced garlic cloves, lemon juice, salt and pepper;
- Let marinate for 20 minutes;
- Peel the banana, cut in half lengthwise and then in half;
- Take to blush on both sides;
- Remove and color the swordfish fillets;
- First with the skin facing down and pressing down with a spatula to make them straight;
- Remove and pour the passion fruit into the skillet;
- Arrange the fillets with the banana;
- Drizzle with the passion fruit sauce;
- Decorate to taste and serve with sweet potato.
