Sweet Potato and Black Bean Quesadilla
Prepared very simply but with lots of flavour, here’s a quick snack you can prepare for yourself and your family!
Ingredients

1 tablespoon olive oil

½ white onion, finely diced

1 sweet potato, peeled and cut into small cubes

1 teaspoon butter

1 handful chopped coriander

300g grated mozzarella
Preparation Method
- Heat a frying pan and add the olive oil. When hot, add the onion and cook until softened, then add the sweet potato, Chipotle paste, a pinch of salt and freshly ground pepper.
- Stir and cook for a minute or two, then add ½ cup of water and cover the pan until the sweet potato is cooked. When it’s ready, add the butter and let it melt. Finish with the coriander sprinkled on top and set aside.
- To make your quesadillas, take two tortillas and add a good amount of grated mozzarella. Then add the sweet potato and distribute evenly. Add a spoonful of Cantina black beans and finish with more cheese, folding the quesadillas in half.
- Heat a non-stick frying pan and brush the surface with olive oil. When hot, place the quesadillas in the pan and let them toast and brown on both sides, with the cheese melting inside.
- Remove when ready and cut in half.
