Sapphio Stew

1 kg of conger or saphio

Preparation Method
- Cut the fish into eight pieces, after cleaning and seasoning with salt;
- Cover the bottom of a pan with oil and a layer of sliced onions;
- Arrange the steaks in a single layer and add white wine, chili peppers, chopped peppers, and ground garlic and parsley. Season with salt;
- Whisk the egg yolks and lemon juice in a bowl and pour evenly into the pan. Cover and heat for 30 minutes;
- Serve over slices of toasted bread.
