Roasted vegetables with Quinoa and Balsamic Vinegar
When using this vinegar in hot dishes, we should add it only at the end, so that it doesn’t lose the characteristics that make it so special!
Ingredients

200g diced pumpkin

100 gr mushrooms

1 courgette cut in half-moons

1/2 red onion

A few strips of pepper

Thyme

Olive oil

Cooked quinoa

Fresh spinach

Chopped walnuts
Preparation Method
- Start by placing all the vegetables in a bowl/tablet.
- Add Balsamic vinegar, honey, thyme, a pinch of salt and mix well.
- Place in the baking tray, add a drizzle of olive oil and cover.
- Place in the microwave. Bake in the oven at 200ºC for 30 minutes.
- Note: Only the microwave in the “oven” function (because the accessories are metal)
- Serve with spinach (raw or sautéed), quinoa, vegetables and chopped nuts.
