Rice Flour Biscuits
These rice flour biscuits are quick and easy to prepare, ideal to accompany a varied breakfast. Here’s how to make them.
Ingredients

⅓ cup teff flour

⅓ cup oat flour

2 tablespoons cornstarch

½ teaspoon cinnamon powder

½ teaspoon baking powder

55 g unsalted butter

1 ½ tablespoon of water
Preparation Method
- In a food processor, place the rice, teff and oat flours, cornstarch, brown sugar, cinnamon, baking powder and a pinch of salt.
- Grind for a few seconds, until everything is combined.
- Add the chunky butter and grind again, until the mixture resembles a fine sand.
- Add the water, honey and vanilla essence and mix until it forms a ball of dough.
- Wrap it in kitchen paper and put it in the fridge for about 30 minutes.
- Remove the dough from the refrigerator and roll it out on a floured surface until it is very thin.
- When you have a thin rectangle, cut it into 2-centimeter square biscuits.
- Prick them with a fork and put them back in the cold for about 20 minutes.
- Remove and bake in a preheated oven at 170ºC for 20 minutes or until golden brown.
