Quinoa salad with mackerel

Ingredients

2.5 dl water

420 g cooked black beans

100 g red onion

150 g rocket

2 tablespoons olive oil

Preparation Method
- Put the quinoa in a colander, rinse it under running water, put it in a saucepan with the water and half the salt and bring to the boil.
- Simmer, covered, over a moderate heat for about 15 minutes.
- Wash the tomatoes, clean them of seeds and chop them up.
- Drain the beans, rinse them and add them to the tomato.
- Add the drained mackerel fillets, the red onion, peeled and cut into thin slices, and the rocket leaves.
- Season with the remaining salt, drizzle with olive oil and vinegar, add a few chopped mint leaves and mix well.
- Fluff up the quinoa with a fork and mix with the rest of the ingredients. Serve immediately.
