Psidium Jam Cake

This Fruit Jam cake can be prepared to serve in a special breakfast, or for a snack or even for dessert.

Preparation Method

  1. Beat the egg whites and reserve. Add the sugar to the yolks and beat until you get a light cream;
  2. Add the butter and yogurt and mix. Add 3 tablespoons of compote and mix;
  3. Add the sifted flour and mix gently. Add a small part of this mixture to the snow whites and mix, gently, from the bottom up with a spatula, until everything is incorporated;
  4. Add the two mixtures and continue mixing in the same way: gently, from bottom to top;
  5. Put the dough in a greased form. Reserve a small part of the dough. On top of the dough, distribute pieces of jam. Cover with the rest of the dough;
  6. Bake in the oven for 35/40 minutes, or until the toothpick test is clean;
  7. As the jam is heavier than the dough, it will sink to the bottom of the pan. So when you turn the cake, the jam will be on top. Sprinkle with powdered/confectioner’s sugar, if preferred.
