Prawns with Chipotle

Works well as a starter or can be expanded into the main course. For a simpler meal simply serve with toast, to be dipped in the pan juices.

Ingredients

  • 75g room temperature butter
  • 2 tbsp olive oil
  • 12 raw prawns
  • ½ lemon, cut into pieces
  • 1 handful of parsley leaves

Preparation Method

  1. Mix together the butter, chipotle paste and olive oil.
  2. Remove the shells from the prawns if you like – we prefer to leave them on.
  3. Pour the spicy mixture over the prawns in a bowl, squeeze a few slices of lemon, mix together and leave for at least 30 minutes.
  4. Fry the prawns covered in chilli butter until they are completely pink.
  5. Don’t overcook them or they will become tough and chewy. Sprinkle a little parsley and serve with toast.
