Prawns with Chipotle
Works well as a starter or can be expanded into the main course. For a simpler meal simply serve with toast, to be dipped in the pan juices.
Ingredients

75g room temperature butter

2 tbsp olive oil

12 raw prawns

½ lemon, cut into pieces

1 handful of parsley leaves
Preparation Method
- Mix together the butter, chipotle paste and olive oil.
- Remove the shells from the prawns if you like – we prefer to leave them on.
- Pour the spicy mixture over the prawns in a bowl, squeeze a few slices of lemon, mix together and leave for at least 30 minutes.
- Fry the prawns covered in chilli butter until they are completely pink.
- Don’t overcook them or they will become tough and chewy. Sprinkle a little parsley and serve with toast.
