Pork Chops with Paprika from La Vera are a traditional Spanish dish that everyone loves.
Ingredients

4 pork chops

1 large onion cut into rings

2 minced garlic cloves

1 teaspoon dried thyme

Preparation Method
- Season the pork chops with salt, black pepper and BitterSweet Smoked Paprika.
- In a large, deep skillet, heat 2 teaspoons of the oil over medium-high heat until it shimmers a little. Add the chops and cook on both sides until browned, about 10 minutes total. Remove the chops from the pan, place them on a plate and set aside.
- In the same pan, leave the remaining oil, add the remaining teaspoon of olive oil and lower the heat to medium temperature. Add the onion and garlic and cook stirring for about 3-4 minutes. Add the crushed tomato, dried thyme, BitterSweet Smoked Paprika, salt and pepper. Cook over low heat, stirring occasionally, for 20 minutes.
- Put the chops back in the pan and cook them well. Adjust salt and pepper if necessary.
- Serve immediately with a little fresh thyme on top, or with cream of polenta, mashed potato or pasta.
