Pistachio Cake with Fresh Figs and Almonds Chocolate Amanduo
Who doesn’t like a fluffy and tasty cake to accompany a coffee and an interesting conversation?
Ingredients
For the cake

4 eggs

70 g of flour
-
80 g of crushed pistachios
To the ice
-
100 g of milk chocolate
For decoration
-
Fresh figs
-
Chocolate Amanduo Almonds
Preparation Method
For the Cake:
- Turn on the oven to 180º C.
- Beat the egg whites with half the sugar until you get a meringue. Book it.
- Beat the egg yolks with the rest of the sugar until pale and you get a pale, frothy milkshake.
- Reduce the mixer speed to a minimum and add the oil in a thin stream. Stop beating once it’s incorporated.
- Using a spatula and using circular motions, add the flour, ground pistachios, and meringue.
- Place in a greased and floured shape and bake for 30 minutes, or until a toothpick or knife inserted comes out clean. Unmold and let cool on a wire rack.
For the icing:
- Melt the chocolate in the microwave or in a bain-marie and add the coconut oil.
For Decoration:
- Cover the cold cake with the frosting and decorate with the figs cut in four and the Chocolate Amanduo Almonds, roughly chopped.
