Partridge Broth
A comforting partridge broth. A real delight to taste when the days start to cool down.
Ingredients

2 partridges

150 g ham

250 g bread

2 onions

6 mint leaves
Preparation Method
- Clean the partridges and cook them in about 2 liters of water and the game broth (low heat).
- Peel and cut the onions and ham into small pieces.
- When the partridges are cooked, remove them from the pan, and add the chopped onions and ham to the broth.
- Let it cook well.
- Separately, cut the bread into slices, toast it and place it in the bottom of the terrine.
- Check the seasonings of the broth, water the toast, and let it soak a little.
