Milk-Cream with Lime and Honey

Ingredients

  • 60 g of corn starch flour
  • 7 gems
  • 1 l of milk
  • 5 tablespoons of honey
  • rind of 1 lime
  • 1 cinnamon stick
  • demerara sugar for sprinkling

Preparation Method

  1. Dissolve the cornflour in a little of the milk, then add the yolks and honey, stir well and set aside. Bring the remaining milk, the lime rind and the cinnamon stick to the boil.
  2. When it comes to a boil, remove from the heat, let it cool a little and add, in a thread and always stirring, to the yolk mixture. Put it back in the pan and put it on the fire until it thickens.
  3. Remove the lime peel and cinnamon stick from the mixture, pour it into a bowl, sprinkle with demerara sugar and bake in the oven, preheated to 220ºC, for about 7 minutes.
  4. Remove, let cool slightly and refrigerate before serving.
