Milk-Cream with Lime and Honey

60 g of corn starch flour

7 gems

1 l of milk

5 tablespoons of honey

rind of 1 lime

1 cinnamon stick

demerara sugar for sprinkling
Preparation Method
- Dissolve the cornflour in a little of the milk, then add the yolks and honey, stir well and set aside. Bring the remaining milk, the lime rind and the cinnamon stick to the boil.
- When it comes to a boil, remove from the heat, let it cool a little and add, in a thread and always stirring, to the yolk mixture. Put it back in the pan and put it on the fire until it thickens.
- Remove the lime peel and cinnamon stick from the mixture, pour it into a bowl, sprinkle with demerara sugar and bake in the oven, preheated to 220ºC, for about 7 minutes.
- Remove, let cool slightly and refrigerate before serving.
