Mediterranean style roast chicken
An easy dinner full of Mediterranean flavour.
Ingredients

3 tablespoonful of red wine vinegar

½ ciabatta bread, cut into pieces

100 g crumbled feta cheese (optional) to serve

olive oil for drizzling

a mixture of 10 yellow and red peppers, halved and seeded

1 head of garlic
-
8 chicken pieces (thigh and upper thigh)
Preparation Method
- Preheat the oven to 180 ºC.
- Put all the ingredients in a large roasting pan. Drizzle with olive oil and red wine vinegar. Season generously with Mediterranean Roast Marinade Seasoning and then, with your hands, mix everything together to evenly coat the seasoning, oil and vinegar. Tuck the chicken skin side up between the other ingredients and place the baking dish in the oven.
- Bake for 40-45 minutes until the vegetables are cooked and lightly toasted and the chicken is browned. Finally, remove the baking tray from the oven and sprinkle the feta cheese (if using) and serve.
