Mediterranean Salad with Pasta and Codfish
A simple, quick, healthy and tasty salad.
Ingredients

150g of pasta to taste

2 eggs

½ onion cut into thin half-moon slices

1 cucumber cut into cubes

80g tinned grilled peppers, diced

8 black olives, stoned and cut into pieces

6 julienne sliced basil leaves

Salt to taste
Preparation Method
- Season with salt in a pan of boiling water. Add the pasta and stir with a fork. Let it cook for the time indicated on the package. In a pan with water, cook the eggs for 10 minutes.
- Once the pasta is cooked, drain it and rinse it in a little cold water. Once the eggs are cooked, remove them with a skimmer to a bowl of cold water. Peel the eggs.
- In a bowl add the cucumber, tomato, onion, olives, peppers, capers and basil. Season with salt. Mix well. Finally, add the cod and the oil. Mix well and keep in the fridge for about 15 minutes until everything is cold.
- Place the pasta in a salad bowl and mix well with the salad. Garnish with the eggs cut into wedges.
