Maple syrup fudge
A healthy fudge to share with friends.
Ingredients

butter for greasing q.b.

240 ml of cream

3 tablespoon of butter

2 tablespoonfuls of chopped almonds

Caster sugar to taste
Preparation Method
- Line a small baking tray with baking paper. Grease the sheet with a little butter and set aside.
- Place the maple syrup in a medium pan and bring it to a boil over low heat for 5 minutes, keeping a close watch.
- Add the cream and, without stirring, let it boil for 20 minutes on low heat, until it reaches 115ºC.
- Add the butter and, again without stirring, let it cool down for about 8 minutes.
- Pour the mixture into a bowl and beat it with a mixer until it is very thick.
- Pour the mixture into the tray and sprinkle it with chopped almonds.
- Place in the fridge for about 3 hours. Serve the fudge sprinkled with icing sugar.
