Mango and Saffron Kulfi
Kulfi is one of India’s favourite desserts.
Ingredients

3 cups diced mango pulp (approximately 2 medium mangoes)

1 tin of condensed milk

200 g cream

Chopped pistachios or almonds
Preparation Method
- Blend the mango, condensed milk and cream in a blender. Strain so that no mango fibre remains.
- Taste to see how it is and, if necessary, add lemon juice and sugar to taste.
- Mix in the cardamom and saffron threads and put the mixture in the freezer.
- A few hours later, when the ice cream is partially frozen, put the mixture back in the blender or beat it with an electric whisk in the container itself. This will make the ice cream very creamy. Sprinkle with the pistachios or chopped almonds and put it back in the freezer (if you prefer, in individual ice-cream moulds).
- If you choose not to put it in individual ice cream moulds and serve the ice cream in bowls instead, you can sprinkle a little more chopped pistachios on top.
