Madeira-style Vinha d’Alhos meat
Carne de vine-d’alhos is one of the delicious typical dishes on Madeira Island.
Ingredients

1 kg of lean pork

1 bay leaf

2 cl of wine vinegar

100 g sliced regional bread

1 orange cut into rounds

2 cloves from India
-
60 g of lard
-
4 g of black pepper

1 dl of olive oil

Parsley
Preparation Method
- Cut the meat into cubes. Drizzle with wine and vinegar. Add the bay leaf, crushed garlic and cloves. Season with salt and pepper.
- Leave to marinate for at least 6 hours.
- Brown the meat in a frying pan with the lard, until it is golden.
- Serve with slices of orange and bread fried in olive oil, garnished with sprigs of parsley.
Tip: Vinha d’alhos is a sauce made with wine, garlic, bay leaf and salt, used to season meat before cooking it.
