Lemon Curd Cookies
Lemon Curd is produced from the best quality ingredients. The lemons harvested from the Beira Baixa orchards, with an excellent aroma, give it a unique flavour.

150 g butter

350 g flour

1 tablespoon lemon zest

2 egg yolks
Preparation Method
- Start by mixing the flour with the salt and add the butter in pieces, kneading with your fingertips until you obtain a kind of bran.
- Add the sugar, egg yolks and lemon juice, and zest, mixing well until it forms a homogeneous dough.
- Form a ball with the dough, cover it with cling film, and put it in the fridge for 30 minutes.
- After this time, shape them into small balls the size of walnuts, dimple them in the center and flatten them slightly. Place the dough balls on a baking tray lined with baking paper and fill each dimple with a little lemon curd.
- Bake in the oven, preheated to 180ºC, for about 8-10 minutes or until lightly browned.
- Remove the biscuits from the oven, and add a little more lemon curd, if necessary.
