Leg of Goat with Mustard and Mint Jelly

Ingredients

1.5 kg leg of lamb

1 soup spoon of sweet pepper

Garlic powder

1 tablespoon of salt

pepper mixture

1 tbsp. Dijon mustard

1 tablespoon of mustard seed

2 tablespoonful of honey

2 tablespoonful of thyme

1 tablespoon rosemary

100 ml of white wine

2 tablespoonful of olive oil

mint jelly
Preparation Method
- Preheat the oven to 190 °C.
- Season the leg of lamb with the sweet paprika, garlic powder, salt and pepper.
- Mix the mustards, honey, thyme and rosemary in a bowl.
- Place the meat on an oven tray, spread the mixture over it and drizzle with the wine and two tablespoons of olive oil. Leave it to marinate for about 1 hour.
- Place the meat in the oven for 1 hour and drizzle as needed.
- Serve with the mint jelly. You can accompany it with a green salad.
