Lamb Ribs with Flavored Olive Oil
Lamb is one of the tastiest meats, and chops are the main course of an elegant meal or the simple solution for a pleasant family meal.
Ingredients

800g lamb ribs, cleaned

400g new potato

400g of broccoli

salt
-
pepper mill

chopped parsley q.b.
Preparation Method
- Start by cleaning the lamb ribs, leaving the bone without meat.
- Wrap the bones in aluminum foil so they don’t burn while grilling the ribs.
- Grill the ribs, brushing them with rosemary-flavored oil.
- Grill the cherry tomatoes on the grill.
- Cook the potatoes cut into wedges, and steam the broccoli.
- Saute the potatoes in olive oil, sprinkling them with chopped parsley.
- Serve the ribs sprinkled with fleur de sel and drizzle with the flavored oil.
Chef’s Tips:
Strike the broccoli stalks crosswise, so that they cook faster and more evenly. The fleur de sel is only used in the final stage when it is used for plating.
