Gin, Raspberries and Lime Cocktail
A cool cocktail, great for a summer afternoon.
Ingredients

60 ml raspberry syrup: (50 g sugar + 150 g raspberries + 40 ml water)

20 ml of lime juice

160 ml of sparkling water
Preparation Method
- Start by making the syrup. Put the sugar, raspberries, and water in a small pan and bring to a boil.
- When it boils, simmer for 2 minutes.
- Strain the resulting liquid through a strainer.
- Chill until cold.
- Place the syrup, gin and lime juice in a shaker. Shake vigorously.
- Pour into glasses and add the chilled sparkling water.
- Garnish with raspberries and zest or thinly sliced lime peel.
