Fried Blue Jack Mackerel with Villain Sauce
Typical dish of Azorean cuisine made with a fish that is abundant in the sea of the Azores. Usually served with boiled potatoes and with a sauce made with garlic, parsley, ground pepper, vinegar and white pepper.
Ingredients

1kg of blue Jack Mackerels (or small mackerel)

3 cloves of garlic

Oil

2 eggs

Cornflour
-
Salt
For the sauce:

3 tablespoons of tomato pulp

White wine
Preparation Method
- After the mackerels are cleaned, season with salt, pepper and garlic.
- Separate the yolk from the white of an egg and stir the yolk;
- Wrap the mackerels one by one, in the yolk and then in the flour. Fry the mackerels;
- For the sauce, place the garlic in the seasoning of the mackerels in a frying pan, 2 tablespoons of ground pepper, a drizzle of olive oil and the white wine;
- Wait for the sauce to finish;
- Serve the mackerels with the sauce and with boiled potatoes.
