Fattoush Salad

Fattoush is a Middle Eastern inspired summer salad that incorporates delicious seasonal produce, chickpeas, Syrian bread and a variety of fresh herbs.

Ingredients

  • 1 pita bread
  • Olive oil
  • 1 handful of tomatoes cut in half
  • 1 cucumber cut in half lengthways and sliced
  • 5 small radishes, cut in 4
  • 1 tablespoon chopped red onion
  • 1/2 cup whole mint leaves
  • 1/2 cup chopped parsley
  • 3 tablespoons of pomegranate seeds

Preparation Method

  1. Preheat the oven to 200 degrees.
  2. Place the Syrian bread on a lined baking sheet, drizzle with olive oil, and sprinkle with 1 teaspoon of sumac. Bake until crispy and golden brown for about 10 minutes.
  3. In a large bowl, mix together the chickpeas, tomatoes, cucumber, radishes, onion, herbs, and sumac and stir lightly to incorporate.
  4. In a glass bowl, whisk together the lemon juice, olive oil, and pomegranate molasses. Add the dressing to the salad and mix together.
  5. Season with salt and pepper to taste. Top with pomegranate seeds.
  6. Break the chilled Arabic bread into pieces and toss small pieces into the salad or serve as a side dish.
