Dried Fruits Cake with Crystallised Ginger
The little cubes of ginger look delicious on a sandwich or pancakes.
Ingredients

75 g cranberries

40 g sultanas

2 dried figs

45 g date syrup

125 ml soya drink

50 g vegetable butter

1 teaspoon baking powder

½ teaspoon bicarbonate

1 tablespoon cinnamon

115 g crushed oats

40 g ground almonds

2 tbsp cornstarch
Preparation Method
- Place the nuts (sultanas, ginger, figs, and cranberries) in a pan.
- Add the vegetable drink, sugar, and syrup and leave to simmer for about 10 minutes. Stir all the time. Turn off the heat, add the vegetable butter, and stir until melted.
- In a bowl add to the mixture, the flour (oat, almond, and starch), the yeast, the bicarbonate, and cinnamon. And stir.
- Put baking paper in the mold. Bake in the oven for 45 minutes at 170º. Leave to cool.
- This quantity is for a 15cm mold. For a bigger cake make 2 to 3x more in all quantities.
