Country Chicken with Red Wine
A unique combination this recipe for country chicken with red wine, marinated overnight, along with herbs to intensify the flavour.

1 unit country chicken

1 dessert teaspoon of salt

thyme

rosemary

2 garlic cloves

2 bay leaves

1 tablespoon olive oil

50 g bacon

10 pieces of spring onion

150 g white mushroom
Preparation Method
- After washing well, cut the chicken into uniform pieces. Place in a bowl.
- Season with salt, drizzle with the wine and add the thyme, rosemary, crushed garlic cloves, bay leaves, and half the parsley.
- Leave to marinate overnight in the fridge.
- Heat the olive oil in a pan and add the chicken pieces, drained from the marinade, and the bacon.
- Cover for 2 minutes, then refresh with the marinade liquid.
- Cook for 15 minutes and add the whole peeled spring onions.
- Add the mushrooms and stew until the chicken is tender.
- Accompany the chicken with mashed potatoes.
