Chocolate Pancakes
The cold winter weather makes for more indulgent moments and chocolate pancakes with lots of icing are a real treat.
Ingredients

250 g wheat flour

2 eggs

250 ml milk

35 ml sunflower oil

5g baking powder

1 pinch of baking soda

oil (or butter) to grease the pan
Syrup

45 g butter
-
10 g honey
-
60 g strawberries, to finish
Preparation Method
- Mix together the flour, chocolate powder, sugar, and salt.
- Break one egg at a time and add to the dry mixture.
- Add the milk and oil and mix well with a wire whisk until smooth.
- Let the dough rest for 10min. Add the baking powder, and bicarbonate and mix well.
- Take a small non-stick frying pan to medium heat, when heated, with a piece of paper towel, grease the bottom of the pan with oil – repeat this operation each time.
- Place 1 ladle of batter in the center of the frying pan, lower the heat and leave it for about 1 minute until the side of the pancake starts to firm up and bubbles form in the center of the batter.
- With a spatula, turn the pancake and leave for 1min more to brown the other side. Transfer to a plate and repeat with the rest of the dough.
- Melt the chocolate and the butter in a bain-marie. Mix well and add honey. Stir until you obtain a homogeneous coverage.
- Serve the pancakes still warm with the chocolate syrup and strawberries
