Chicken with vegetables and quinoa
In just 25 minutes, prepare this chicken with vegetables and quinoa. This flavourful recipe is a great solution for everyday meals when there is less time to cook.
Ingredients

400 g medium chicken breast

2 tablespoonful of extra virgin olive oil

4 garlic cloves

50 g chopped onion

200 g bimi

2 small courgettes

½ a lemon
Preparation Method
- Cut the chicken breasts in half lengthways. Season with half the salt freshly ground pepper and paprika.
- Heat half the olive oil in a pan or deep frying pan and brown the meat on both sides over medium to high heat.
- Reduce the heat and add the remaining olive oil, the crushed garlic cloves, and the onion.
- Cut the bimis into smaller pieces and the courgette into rounds. Add them to the pan, season with the remaining salt, cover, and cook over moderate heat for about 20 minutes.
- Remove from the heat, drizzle with lemon juice, and sprinkle with freshly ground pepper.
- Serve with the heated quinoa.
