Chestnut Cake from Sernancelhe
Sernancelhe is quite famous for its chestnuts. In this recipe they are highlighted, being the chestnut cake of Sernancelhe traditional in this region of Viseu.
Ingredients

½ litre semi-skimmed milk

6 egg whites

200 g flour

50 g liquid caramel
Preparation Method
- Preheat the oven to 170°C.
- Cut the shell of the chestnuts and cook them for about 30 minutes in boiling water.
- While still warm, peel and crush them.
- Place the milk and sugar in a pan and bring to a boil.
- Add the chestnuts and stir until you get a thick paste. Remove from the heat, place in a bowl, and leave to cool.
- Meanwhile, beat the egg whites until stiff.
- Add the beaten egg whites and flour alternately to the chestnut mixture and milk. Add the vanilla essence.
- Pour the mixture into a caramelized tin and bake in the oven for about 1 hour.
- Remove the cake from the tin while it is still warm, place it on a plate and decorate with chestnuts.
