Carrot Cake with Butter Crisp Topping

Ingredients

2 eggs

120g unsalted butter

240g flour

2 teaspoons baking powder

150g grated carrots

1 teaspoon cinnamon powder

150g icing sugar

2 tablespoons water
Preparation Method
- Preheat the oven to 180°C.
- Mix the eggs and sugar in a large bowl.
- Melt the butter for a few seconds in the microwave and add to the mixture with the milk.
- Add the flour, baking powder, salt, and cinnamon.
- Mix well and add the carrots with a spoon.
- Bake in the oven for 40 minutes, or until you insert a knife into the center of the cake and it comes out clean.
- Let the cake cool at room temperature before preparing the frosting.
- When the cake has cooled completely, mix the icing sugar and water in a small bowl and pour over the cake.
- Cut 4 Crisps of butter into small pieces and spread over the top of the cake.
