Banana Cake with Honey and Pollen
Pollen is one of the richest biological substances. It contains all the amino acids found in living cells, as well as vitamins, proteins, lipids, sugars and mineral salts. It is a natural and very complete food supplement. Here we offer pollen just as the bees carry it into the hive: in granules.
Ingredients

3 Bananas (well mashed)

1 natural yoghurt

2 eggs (beaten)

3 + 3 tablespoons honey

110 g Cornstarch

1 teaspoon baking powder

150 g of margarine (melted) + q.b. of margarine (to grease the mould)
Preparation Method
- Preheat the oven to 190°C.
- Mix the bananas with the yogurt, eggs, 3 tablespoons of honey, cinnamon, and a pinch of salt. Gradually add the cornstarch, sifted rice flour and baking powder.
- Add the margarine and mix well.
- Pour the mixture into a greased cake tin and bake in the oven for about 60 minutes.
- Remove from the oven, allow to cool a little, unmold and leave to cool completely.
- Drizzle with 3 tablespoons of honey and sprinkle with bee pollen.
