Araçal jam cake

Preparation Method

  1. Beat the egg whites until stiff and set aside. Add the sugar to the egg yolks and beat until you get a light cream;
  2. Add the butter and yogurt and mix. Add 3 tablespoons of jam and mix;
  3. Add the sifted flour and mix delicately. Add a small part of this mixture to the egg whites and mix delicately, from bottom to top with a spatula, until everything is incorporated;
  4. Add the two mixtures and continue mixing the same way: delicately, from bottom to top;
  5. Pour the dough into a greased tin. Put a small part of the dough aside. On top of the dough, distribute pieces of jam. Cover with the remaining dough;
  6. Bake for 35/40 minutes, or until the toothpick test is clean;
  7. As the jam is heavier than the dough, it will go down to the bottom of the tin. Therefore, when you turn the cake over, the jam will be on top. Sprinkle powdered sugar/confectioner’s sugar, if you prefer.
