Alheira with Egg and Greens

Ingredients

100g of bread

1 alheira sausage

1/2 onion

1 garlic clove

150g of frozen turnip greens

2 quail eggs
Preparation Method
- Remove the skin from the alheira and cook the turnip greens in boiling salted water.
- In a frying pan, sauté in Extra Virgin Olive Oil, the chopped onion, and garlic.
- Add the turnip greens, and the alheira and crumble slightly.
- Add the crumbled bread and season with salt and pepper.
- Keep mixing, if you find it too dry, add the water to cook the turnip greens little by little.
- In another frying pan greased with Extra Virgin Olive Oil, fry the eggs.
- Serve the alheira mixture in a ring with the egg on top. Finish with a little pepper.
