Santa Catarina, presents the new Mestre Saúl range, the first premium Portuguese canned fish of matured tuna, created in honor of Mestre Saúl Casimiro, a man of great knowledge in the art of canning, whose contribution was decisive for Santa Catarina in the elaboration of a product single.
Mestre Saúl is the first range of products that enters the segment of canned matured tuna, a new trend in canning production that responds to the most demanding consumers, who are looking for selected and exclusive products for a different tasting experience.
For the elaboration of the Mestre Saúl preserves, the selected tuna fillet is “wisely” manipulated, according to the ancestral techniques of curing the fish in preserves, and it is kept maturing for more than a year in a can until it is ready to be consumed. The maturation process serves to add flavor without interfering with the main ingredient, that is, the tuna. This one transforms over time, the fibers become softer and the flavor is smoother and more delicate. The matured tuna is tasted and appreciated in the best state of conservation, being a celebration of the best tuna in the Azores, living up to Mestre Saúl’s motto, “Good things are expected”.
Who is Mestre Saúl Casimiro?
Born in 1918 in the Algarve, from a very young age Saúl Casimiro dedicated himself to the art of preserves. A simple man, but with strong convictions, he knew that only by preparing the best tuna while it was still fresh, by cooking it only in brine, would he be able to maintain all its nutritious qualities and all its freshness.
In 1955, Saúl Casimiro was invited to bring knowledge to the island of São Jorge, in the Azores, where he found the raw material he dreamed of: the best fresh tuna. Here he remained until the end of his life, dedicated to fulfilling a mission: to produce the best canned tuna in the world.
Through a simple and artisanal method, which has been passed from generation to generation, it is thanks to Mestre Saúl Casimiro that today the best taste of the Azores sea comes to our tables.
