Pimenton is a pepper native to South America.
But since the 16th century, Pimenton has been grown in Spain in the region of La Vera, in the heart of the Sierra de Gredos. This region has an exceptional temperate and humid microclimate. This pimenton de la Vera benefits from a PDO that guarantees the best quality.
The La Vera region is located in Extremadura, home to many conquerors, including Hernan Cortés, who conquered the Aztec Empire in the name of Carlos V.
Pimenton de la Vera comes from a one-meter-tall shrub, Capsicum annuum, whose fruits are delicately hung to dry, then smoked with holm oak for two weeks.
The flavor of the chorizo and its dark red color are part of the traditional Spanish repertoire and delight familiar and popular dishes such as paella or tortillas.
