Sugar is made from maple sap, which is harvested from early spring to early summer, in the forests, in the province of Quebec.
The sap flows in the spring, 3 cm deep, in the trunk that is collected in a bucket. Then it turns into syrup, then thickens and turns into maple sugar.
These crunchy and natural nuggets are used as brown sugar, in yoghurts, fruit salads or pies where they provide a crunchy and delicate texture. They are also perfect for caramelizing endives, scallops and sweet and savory dishes. Simply exceptional.
