Pepper pulp is used in the most varied Azorean dishes, it is part of the Azorean culture and is present in every house.
Dona Pimentinha’s Pepper Pulp is produced in Candelária, São Miguel Island, Azores, and prepared by hand.
Pepper pulp is obtained using an artisanal method, where after cutting and removing the seeds, the chilli peppers are ground in a mill specifically for this purpose. Among other cooking secrets, this dough is then placed in clay salt pans for some time.
On the island of S.Miguel, in the Azores, it is commonly known as Pimenta Vermelha, Pimenta da Terra or simply Pimenta. On the mainland we call Pimenta da Terra to identify this paste from the Azores, so characteristic and wisely produced.
