This vinegar is made from the wine in champagne bottles and aged in oak barrels. It has an amber color and a slightly woody flavor.
Aromatic but delicate, this vinegar does not mask the flavor of the ingredients it comes with. Therefore, it can be used in salads, sauces and even asparagus. It is also used to enhance and defrost many meat or vegetable dishes, as well as mayonnaise.
