Given its reduced ability to take root, Galega olives presents a high resistance to detachment, which makes mechanical harvesting more difficult. The seed is easily separated from the pulp, which makes it an ideal olive for pickling. The olive oil made from Galega olives conveys sweet sensations, being neither bitter nor spicy.
This Portuguese olive oil of superior category, obtained directly from olives, solely by mechanical means.
