Aioli is a typical French culinary sauce, original from Provence, consisting mainly of garlic, olive oil and egg yolks. It’s similar to mayonnaise, but traditionally it does not carry vinegar or mustard.

Ideal as a sauce of chips, to go with raw or cooked vegetables, meats, fish and seafood (with the exception of oysters and sea urchins), snails fried Green Beans etc. … The aioli goes well with everything, even with a piece of bread!
