Product Description
Brandade de bacalhau is a speciality of Nîmes, but widely found in Languedoc and Provence. Cod fillets are desalted overnight by changing the water several times and then boiled. A puree based on cod, milk and olive oil is then prepared to a creamy consistency.
The Parmentier version of brandade adds mashed potatoes to the fish cream to make it a complete, rich and gourmet recipe to be enjoyed in any season.
