Organic Cider Vinegar with Matcha and Lemon. A new balance of flavors. This organic mothered cider vinegar is unfiltered, unpasteurized and naturally gluten free. It can be drunk absolute for a refreshing herbal tea, blended with seasonal fruits for a morning smoothie, and can be used as a flavoring on raw or steamed fish.
The mother of vinegar is a substance composed of a form of cellulose and acidic vinegar bacteria that develops from the fermentation of alcoholic liquids and which, with oxygen, transforms the alcohol into vinegar acid. After acetic fermentation, the products are filtered or pasteurized to eliminate any residues. This vinegar is unprocessed, therefore unfiltered and pasteurized and still has inside the “mother” of the vinegar which is rich in proteins and enzymes.
